General Manager -Underground - KU Dining

you will drive strategic and daily operations for a high volume retail unit with integrity, accountability and operational foresight. We want a manager who can direct all KUDS policies and processes while providing a team with a positive work environment. This position will operate with a high level of fiscal responsibility in regard to sales initiatives and cost reductions. We want someone who enjoys being creative in driving sales, trying new concepts and assist in developing unit marketing campaigns.
The Underground is a multi-concept, high volume retail operation near the center of campus. This lively addition to KU Dining offers seating for over 300 guests, employs 100 part time and full time employees, and offers daily challenges and rewards. Team development, financial focus, and consistently high quality food are a must for success.
Financial - Accountable for the fiscal budget, revenue cost of sales, labor cost. Building and maintaining accurate records for product ordering, inventory, waste control and cash handling.
Human Resources -Responsible for recruitment, hiring, training, mentoring of all staff members and the maintaining of personnel records.
Marketing - Collaborate with the marketing department to produce customer experience and sales driven strategies.
Communication- Ability to effectively communicate operations with KUMU leadership, HR, staff and guests.
Food Quality and Guest Service - Maintain all necessary paperwork pertaining to licensed concepts in accordance with specific company/concept policy. Ensure that all food safety procedures are adhered to.
Operational Awareness- Stay goal oriented and use interpersonal routines to achieve these goals. Resolve challenges globally and permanently.
Minimum 5-years management experience in a dynamic, high volume organization
Experience with various types of large kitchen equipment including refrigeration, impinger ovens, steamers, and fryers.
Confirmed customer service experience
ServSafe certification or the ability to become certified within six months
Bachelor’s degree in Management, Foods and Nutrition or related field.
Validated management experience
Combination of quantity food service operations, retail sales, marketing, merchandising, ordering, purchasing, staffing, training,
cash handling and inventory control experience
Experience in successful operation of various computer systems used throughout a retail operation in addition to Microsoft applications
